Meet Josse Horsten

Hello, I’m Josse Horsten. Through Edible landscapes, I bring my passion for food forests and regenerative agriculture to life. At the heart of my work is a deep fascination with the relationships between people, plants, animals, soil, water and the wider landscape.

I believe that every piece of land has its own character, history and possibilities. My work begins by listening to what is already present and connecting this with the wishes, needs and dreams of the people who live and work there.

Now based in Piloña, Asturias, I work with landowners and farmers across Northern Spain. Over the past decade, I have designed and guided food forests and regenerative land projects in Belgium, the Netherlands and Spain — from the first observations and ideas to detailed design, implementation and ongoing care.

Whether you are creating a homestead, farm, orchard, food forest or a landscape with many different functions, I help bring the different elements together into one living whole — a place that can nourish people, animals, the soil and generations to come.

Where it all took root

My love for food forests began during the seven years I lived and worked at De Weegbree, a permaculture community in Belgium. It was there that the mycelium of food forests quite literally found its way into me.

Living so closely with the land taught me more than how to design. I learned to follow a place through the seasons, to notice how it responds to weather, soil, time and the people caring for it. I came to understand that a design is never a finished image, but the beginning of a relationship.

Those years, together with my work in organic farming and continued training, shaped the way I work today. I don’t follow one fixed philosophy. I bring together insights from different systems, practical experience and intuition — always searching for what truly belongs in the place in front of me.

Education & Experience

Through Edible Landscapes, I offer advice, design and practical guidance shaped around your land, your questions and the stage your project is in. You may be planting the first seeds of a food forest, reimagining a farm or searching for a coherent vision for an entire property. Wherever the process begins, I am glad to walk alongside you — from the first questions to a landscape that can truly take root.
